Agustín de Iturbide, along with the Trigarante Army, passed through Puebla on his way to Mexico City in September 1821 after signing the Treaties of Córdoba.
The Augustinian nuns of the Santa Mónica convent decided to use the colors of the Trigarante Army as a reference to create a new dish: Chiles en Nogada. The colors white, green, and red represent the Three Guarantees: Religion, Union, and Independence.
